Enrichment


This week was my last Enrichment to plan. The new Enrichment counselor, Jodi, was called about a week and a half before the activity, so she stepped in and helped with the final preparations.

The activity was "Food Storage is Fabulous." If you have seen the church pamphlet, "All is Safely Gathered In," you will have noticed that food storage has been divided into two categories, long term and short term. Long term is what we usually think of as food storage--church cannery, wheat, rice beans, etc. However, we are incouraged to obtain the short term by picking up extra things at the grocery store each week. At least our one week supply should be things that our family typically eats.

So, we did a fashion show. Mrs. Sunday walked down the catwalk with a shopping bag in hand. At the end of the catwalk was a table where Mrs. Sunday pulled out items from her bag for each meal of the day. ALL foods had a shelf-life of AT LEAST one year. Then it was Mrs. Monday's turn, etc. At the end of the fashion show, there was an example of one week's menu that the sisters in the ward could purchase and fulfill the council to have a one week supply. They could purchase it and not think about it again for a year.

Then, we divided into two groups. One group went to pack the food portion of 72-hour kits. The other group went to a tortillas-making demonstration (note: Tortillas can be made from 100% storable items. Not many breads can do that). After the tortillas, there was a short demonstration on what to do with wheat, which was simple and awesome. Then the two groups switched.

At the end of the night we served Hours de vours, which were provided by the sisters in the ward.

Jodi and I went to shop at Sam's club for 72-hour kit items. This is one of the two flats we filled up. The Relief Society President, Jodene Meldrum watched my kids and let me borrow her van. Jodi and I both filled the back of a van. On the way to the church, I stopped at Wal-mart to pick up raisins. I spent over $100.00 on raisins, alone!

Items in the kit (Each kit cost $7.00 and included 3 spoons):
Day 1



Breakfast: 2 granola bars, 1 fruit roll up
Lunch: 1 crackers, 1 fruit cup (pack in plastic baggie), 1 beef stick
Dinner: 1 can chicken noodle soup, 1 pkg crackers
Day 2



Breakfast: 1 oatmeal, 1 drink mix

Lunch: 1 fruit roll up, 2 beef sticks, 1 granola bar
Dinner: 1 Cef Boyardee meal, 1 cookies
Day 3



Breakfast: 1 oatmeal, 1 drink mix

Lunch: 1 Chef Boyardee meal, 1 granola bar
Dinner: 1 Ramen, 1 package crackers
Snacks:

5 pieces of gum

Joan Imes walking down the runway. We had feather boas and crazy make-up. We all did cheesy walks to make it more fun. We also carried a "be prepared" item, like a flash light, whistle, or siren.

EASY CHICKEN CACCIATORE
4 breasts, split
3 tbsp. olive oil
2 cans (14 1/2 oz. each) Del Monte Italian style stewed tomatoes
1 can (6 oz.) tomato paste
2 c. sliced mushrooms
1 tsp. crushed basil
Salt and pepper
Hot cooked pasta

Remove skin from breasts. Fry until brown - drain. Add tomatoes, tomato paste, mushrooms, basil and salt and pepper to taste. Cover and simmer 30 minutes. Serve over hot pasta. 4-6 servings.
LIGHT AND EASY PASTA
1 box linguini, cooked
1 box frozen peas
1 c. turkey or chicken, diced
Lite Italian salad dressing

Cook linguini according to package directions. Drain and set aside. Place frozen peas in colander and thaw by running cold water over them. Mix together all ingredients except the salad dressing. Toss the linguini mixture with enough salad dressing to moisten and to season tastefully.

Holy cow, that was a lot of food! How did you pay for it?

I've tried making tortillas several times and always fail. Did yours work? If so please share!!

Also, do you have to put a pot in your 72 hour kit? Did you include other items besides food?
